Great idea for Toddlers

So I don't want anyone to think that I came up with this all by myself, but I have to say that it is a pretty brilliant and easy idea! I got the idea out of Parents Magazine from February. I did modify the instructions a little... It is creative but simple all at the same time.

We are all asked to participate in Class room parties and such, and even though we would all love to be super creative and spend lots of time decorating cupcakes, sometimes it just isn't possible. The store bought cupcakes have so much icing, and I don't know about you, but my boys don't need any extra sugar! They are sweet enough as it is! :)

So take a frozen pound cake, defrost, and then slice the cake into one inch slices. Take a one inch diameter cookie cutter and cut into each slice; you can get two cakes per slice. The magazine used a round cutter, but I used a heart shaped cutter for Valentine's day and an egg and bunny shaped cutter for Easter. Then take a container of store bought icing and empty into a microwaveable bowl. Microwave the icing in 10 second intervals until it is the consistency of heavy cream. Using a fork, dip the cake into the melted icing coating the top and all sides. Use a another fork to slide the cake onto a wax paper covered pan. You can then use sprinkles to decorate the top before the icing sets up or use additional icing to decorate.

I used chocolate icing for Valentine's day and cherry icing for Easter. You can always use white icing and color it with dye. I liked using the flavored icing since the cake doesn't really have a flavor. One more tip, one container of icing is enough to dip two family sized pound cakes.

The cakes are the perfect size for a toddler. Just a couple of bites and a thin layer of icing! They also look like you slaved away in the kitchen! Here is a picture of the ones I did for Valentines.
